    Well.. now, I want to share you about one of my favorite food. Hope this can add your knowledge when you read it well!!!

    CHEESE

                    Everyone in this world may know about cheese. Well, as you know that cheese is the most popular fermentation food, and the taste is so unique. Imagine that when you`re eating cheese products such as cheese burger, lasagna, cheese spaghetti, and you can smell this unique aroma. It  will make you slobber and you want to eat it quickly. People already know this kind of food, “the yellow salty thing”.
                    There are so many people using cheese as their food-stuff. Nowadays, so many food company such as Kenthucky Fried Chicken (KFC), California Fried Chicken (CFC), Texas, and Mc. Donald (Mc.D) producing their food using cheese as the ingredients. Many people like it.
                    As a cheese lover , I`m going to tell you in brief about this yellow salty thing. We must know first what is cheese, the history, and how cheese is made. It is important to know because we are always finding and using this for our food-stuff.
                     First, what is cheese? According to Cambridge Advanced  Learner`s  Dictionary, cheese is a food made from milk which can either be firm or soft and it usually yellow or white in color. In a site, Wikipedia, it gives definition about cheese too. It said that cheese is a generic term for a diverse group of milk-based food products.
                    From those two definition, I conclude that cheese is a fermented food contains of proteins and fat , and it is derived from the milk of various mammals. Cheese is made from animals milk, such as milk that comes from cows, sheeps, goats, buffalo, and horses.  Cheese is produced by coagulation of the milk protein casein. The milk is added of the enzyme named “rennet” that causes coagulation.
                   For the texture and the flavor of cheese, it is combined by several types of natural cheese, and adding salt, milk-fat, cream, whey, water, vegetable oil, emulsifier, gums, gelatin, thickeners, and sweeteners. Cheese may contain the extract from some plants, such as fig leaves, safflower, and melon. The form and its texture is depend of how the cheese is made. If the cheese is made of goat`s milk, it`ll produced the hard cheese. There are several kinds of cheese from the countries of the world. The big countries which are produce cheese are United States (USA), Swiss, and French.
    After we know what cheese is, now we can turn to know the etymology of word “cheese”.
     The word cheese comes from Latin , that is “caseus”. In the Proto-Indo-Europian root, *kwat- means “to ferment, become sour.” Last, word cheese came from chese in middle English and ciese or cese in old English. The Romans began to make hard cheese for their supplies, so a new word “formaticum” from the word “Caseus Formatus” or "molded cheese” is existed. The word cheese itself means “molded” or “formed.”  The word cheese itself also means “molded” or “formed”.
    Now, so let us know about the history. I`ll explain the story in a little but point. Here it is.
    First, I`ll tell you the origin-cheese. Cheese is an ancient food. The early years of cheese-making is about 5.500 BC, In Poland. In this era, the milk-fats molecules have been found. Around 8.000 BC, the cheese making was discovered accidentally by storing  milk in a container made from stomach of an animal, and it resulted the milk being turned to curd and whey by the rennet from the stomach. Cheese-making began independently in that era by pressing and salting of curdled milk to preserve it. Making milk in an animal stomach gave more solid and better textured curds. About 2000 BC, the earliest cheese have been quietly sour and salty. Now, cheese is produced in many countries. The big produser are mostly in Europe, where the climates are cooler and required less salt for preservation. With less salt and acidity, the cheese is became suitable with the environment, and it can giving the good flavors and useful microbes in cheese.
               Next, the Ancient-Greece and Rome. In this country, the cheese was discovered by Aristaeus. In Roman times, the cheese making process involving rennet coagulation, pressing the curd, salting, and last is aging. In the modern era, cheese was unheard in oriental culture. But, when Imperialism of European is spread, then the cultures were influenced by European culture. It also make the cheese were known and increasingly popular. The first factory of the cheese industrial was opened in Switzerland in 1815, but after that United States was also making the factory, and USA is the first factory that had been success.
    Now that we had known about the history. So how about the making process?
                    There are some steps to make cheese. First, the cheese makers must choosing the milk that called “Milk Intake” by testing the milk about the quality and the purity. It must be done because choosing the milk will influence the quality of the cheese. Next, the cheese makers weighting the milk, and pasteurize it to ensure the cheese is safety. This step is called standardization. After that, the cheese  makers adding some good bacteria (which is known as “starter cultures”) and clotting enzyme (which is known as “rennet”). These are for helping determine the flavor and the texture of the cheese, and also to coagulate the milk. After the milk is coagulated, it will be cut into small pieces, for separating the liquid (whey) and the milk solids (curds). The larger curds will be heated at lower temperature to produce the soft cheese, and the others will be heated at high temperature to produce the hard cheese. The last, when the whey had been separated, it will be drained and the curds will be pressed into the molds.
    And, there are some kinds of cheese. They are :
    ·         Soft Cheeses, such as Brie Cheese, Brynza Cheese, Feta Cheese, Maroilles Cheese, and Schloss Cheese.
    ·         Semi-soft Cheeses, such as Limburger Cheese, Munster Cheese, Port du Salut Cheese, and Roquefort Cheese.
    ·         Hard Cheeses, such as Cheddar Cheese, Edam Cheese, Gruyene Cheese, and Swiss Cheese.
    ·         Very Hard Cheeses, such as Asiago Cheese, Parmesan Cheese, Romano Cheese, and Sapsago Cheese.
                    After you know all about cheese, I am sure that you had been enough knowledge to answer the cheese-question. You had known about what cheese is, the etymology, the history, the making process, and its kinds. As we know that it had been long time since cheese was found by the ancient people when they store the animals milk into an animal`s stomach. But now, there are so many countries that had built so many cheese factories. We know that in early years, cheese isn`t popular as it is be popular now, but when the European start to spread their culture, it was rising known by people all the world.
